pancakes are a big deal in my world.
i get that all you paleo types may balk at the suggestion, but i think a warm carb load (on any given morning) makes people feel comforted, close, and connected. not surprisingly, my sons feel the same; pancakes are happy making.
it can be more than that, even. a good ol’ fashioned breakfast seems to bring my husband home.
so, in celebration of simple joys, feeling warm and fuzzy, and close to the people we love and cherish, i feel compelled to tell you the good news. the best news i’ve gotten in over a week, in fact. and, in a week where crappy news has reigned, this little tid bit seems worth sharing.
i’m delighted to report that i successfully subbed-in whole wheat flour to our trusted (and preferred) home-made recipe with no other alterations or adjustments required.
just as good. way more healthy. a huge win.
mix together: 1 & 1/2 cups flour, 3 teaspoons sugar, 1/2 teaspoon salt, and 3 teaspoons baking powder.
add: 1 cup milk
stir until just smooth.
in a separate bowl, mix together: 1/4 cup milk, 1 egg, 1/2 teaspoon vanilla, and 3 tablespoons oil or margarine / butter.
combine all and mix.
